How to Become a Chef*

*Or, more accurately: How I personally decided I wanted to be a chef and started chasing that dream. Obviously, I wouldn’t call myself a “chef” now. I’ve never run my own restaurant, and I know how easily people are triggered by “creators” like me claiming to be chefs. But to be fair, I’ve approached this task with rigor, curiosity, hard work, and earnestness, so I’m not just some joker pretending to cook. Or maybe I am. Who’s to say? But ­ honestly, if you’re someone who believes people must follow a very specific path to become a chef, then may I suggest you’re not really considering the whole of culinary history? Also, this book might not be for you. On the other hand, if you’re curious about how you can become a better cook—whether you want to become a professional chef or not—there’s probably something in here for you. Recipes, for sure, but also ways I’ve tried to grow from not being able to cook an egg to someone who’s writing a cookbook about becoming a “chef.”
